Red grapes and thyme cream sauce elevate this chicken and mushroom dish with a delightful sweetness.
Ingredients:
  • 1 tablespoon olive oil
  • 1 cup sliced fresh mushrooms
  • 1 cup red wine
  • 1 cup heavy cream
  • 1 tablespoon dried thyme
  • 1 cup seedless red grapes, rinsed and dried
Instructions:
  • In a large skillet over medium-high heat, combine butter and oil until melted. Add chicken breasts and sear on both sides for 3 to 5 minutes each until golden brown.
  • Sauté mushrooms until soft for 2-3 minutes. Deglaze with wine to loosen any brown bits, then simmer for 5 minutes.
  • Combine cream into the mixture, followed by salt, pepper, and thyme. Lower the heat, cover, and gently simmer for 5 to 7 minutes, stirring occasionally.
  • Uncover and simmer cream until thickened for 3 minutes. Stir in red grapes and warm through.
