Creamy cashew chicken salad with red and green grapes, tossed in a tangy ranch-mayo dressing for a delectable bite.
Ingredients:
  • 1 (16 ounce) package rotini pasta
  • 4 cups cubed cooked chicken
  • 1 (20 ounce) can pineapple tidbits, drained
  • 1.5 cups sliced celery
  • 1 cup seedless green grapes, halved
  • 1 cup seedless red grapes, halved
  • 0.5 cup Onions, spring or scallions (includes tops and bulb), raw
  • 1 (6 ounce) package dried cranberries
  • 1 cup ranch dressing
  • 0.66666668653488 cup mayonnaise
  • 2 cups cashews
Instructions:
  • Boil a pot of salted water, cook rotini for 8 minutes until al dente. Drain, rinse with cold water, and transfer to a large bowl.
  • Combine the chicken, pineapple tidbits, celery, green and red grapes, green onions, and cranberries together.
  • Combine ranch dressing and mayonnaise in a separate bowl, mixing well. Pour over pasta mixture and toss until evenly coated.
  • Chill in the fridge for a minimum of 1 hour before serving.
