Summery chicken cashew salad with crunchy veggies, perfect for BBQ parties, easy to prep in advance.
Ingredients:
  • 2 cups seashell pasta
  • 0.25 cup brown sugar
  • 1 cup creamy salad dressing (e.g. Miracle Whip)
  • 2 teaspoons lemon juice
  • 1 tablespoon distilled white vinegar
  • 2 cups chopped celery
  • 0.5 cup chopped green bell pepper
  • 3 boneless chicken breast halves, cooked and cut into bite-sized pieces
  • 1 cup cashew halves
Instructions:
  • Bring a large pot of salted water to a boil and cook pasta for 8 to 10 minutes until al dente. Drain and rinse with cold water.
  • Combine brown sugar, salad dressing, lemon juice, vinegar, and salt in a large bowl. Toss the dressing with cooked pasta, celery, green pepper, onion, and chicken. Chill until serving time. Stir in cashews just before serving.
