Delicious and flexible chicken salad perfect as a main dish or side.
Ingredients:
  • 500g chicken breast fillets, trimmed
  • 300g mandarin
  • 1 red capsicum, thinly sliced
  • 80g snow pea sprouts, cut in half
  • 125.00 ml coriander leaves
  • 3 green onions, trimmed, finely chopped
  • 5cm piece ginger, peeled, cut into matchsticks
  • 1 lemon, juiced
  • 18.20 gm peanut oil or vegetable oil
  • 125.00 ml salted roasted cashew nuts, chopped
Instructions:
  • In a large non-stick frying pan, add the chicken and cover with cold water. Bring to a boil over medium-high heat, then reduce to low and simmer for 10 minutes, turning once, until cooked. Transfer the chicken to a bowl and let it rest for 10 minutes before shredding.
  • In a large bowl, mix together the chicken, mandarin, capsicum, sprouts, coriander, onions, and ginger. Season with pepper and gently toss to combine.
  • In a jug, mix 2 tablespoons of lemon juice with oil. Drizzle the dressing over the salad, toss well, divide among plates, sprinkle with cashews, and serve.
