20-Minute Mandarin Chicken Salad

Whip up a quick and delicious chicken noodle salad in a skillet for dinner in 20 minutes!
Ingredients:
  • 2 tablespoons butter or margarine
  • 1 package (3 oz) Oriental-flavor ramen noodle soup mix
  • 2 tablespoons sesame seed
  • 1/4 cup sugar
  • 1/4 cup white vinegar
  • 1 tablespoon sesame or vegetable oil
  • 1/2 teaspoon pepper
  • 2 cups cut-up cooked chicken
  • 1/4 cup dry-roasted peanuts, if desired
  • 4 medium green onions, sliced (1/4 cup)
  • 1 bag (16 oz) coleslaw mix (shredded cabbage and carrots)
  • 1 can (11 oz) mandarin orange segments, drained
Instructions:
  • In a 10-inch skillet over medium heat, melt butter and mix in the seasoning packet from the soup mix. Break the block of noodles into bite-size pieces directly into the skillet and stir into the butter mixture.
  • Cook noodles for 2 minutes, stirring occasionally. Add sesame seeds and continue cooking for about 2 minutes more, stirring occasionally, until noodles turn golden brown. Remove from heat.
  • Combine the sugar, vinegar, oil, and pepper in a large bowl. Add the noodle mixture and the rest of the ingredients, then toss everything together.
