Refreshing zesty salad, perfect side for seafood feast.
Ingredients:
  • 100g (1/2 cup) caster sugar
  • 40.00 gm water
  • 150g pkt walnuts
  • 185ml (3/4 cup) extra virgin olive oil
  • 40.00 ml mandarin juice
  • 40.00 ml white balsamic vinegar
  • 200g baby rocket leaves
  • 6 mandarins, peeled, sliced crossways
Instructions:
  • Prepare a baking tray by lightly spraying it with oil. Combine sugar and water in a heavy-based saucepan over medium heat until the sugar dissolves. Let it cook without stirring for 4 minutes or until it turns light golden. Add the walnuts and then pour the mixture onto the tray. Use a fork to swiftly separate the nuts. Let it cool and set aside.
  • Mix the oil, mandarin juice, and vinegar in a jug. Season to taste.
  • In a large bowl, mix together the arugula, mandarin oranges, and walnuts. Drizzle the dressing over the salad and gently toss to evenly coat everything.
