Ingredients:
  • 80g baby rocket leaves, washed, dried
  • 3 large ripe tomatoes, sliced
  • 180g fresh bocconcini, drained, sliced
  • 1 small red onion, halved, thinly sliced
  • 36.80 gm gourmet avocado oil (The Grove brand)
  • 10.60 gm fresh lemon juice
  • Salt & freshly ground black pepper
Instructions:
  • In a screw-top jar, combine the avocado oil, lemon juice, salt, and pepper. Shake vigorously until fully mixed. Set aside.
  • Lay out the rocket leaves on a large serving platter and artfully place the tomato, bocconcini, and red onion slices on top.
  • Pour the creamy avocado dressing generously over the vibrant tomato and peppery rocket salad and serve promptly.
