Wholesome salad for a quick, nourishing meal.
Ingredients:
  • 42.00 gm fresh lemon juice
  • 1 large fennel bulb
  • 13.80 gm extra-virgin olive oil
  • 3 tsp balsamic vinegar
  • 160g baby rocket
  • 3 oranges, peeled, thinly sliced
Instructions:
  • Add lemon juice to a bowl of refreshing iced water. Trim fennel, saving 1/3 cup of the fronds. Use a vegetable peeler to slice fennel into delicate strips and combine in the bowl.
  • In a small bowl, mix oil and vinegar. In a large serving bowl, combine rocket and orange. Drain fennel mixture.
  • Toss fennel into salad, drizzle with dressing, season with salt and pepper to taste, toss to mix everything perfectly, and garnish with fennel fronds before serving.
