Chicken and mandarin tray bake

Sweet mandarins complement savory chicken and veggies in this flavorful tray bake.
Ingredients:
  • 500g Kent pumpkin, peeled, seeded, cut into 5cm pieces
  • 4 garlic cloves, unpeeled
  • 30.00 ml sesame oil
  • 42.00 gm soy sauce
  • 28.60 gm honey
  • 4 RSPCA Approved Chicken Breast Fillets
  • 500g broccoli, cut into florets
  • 1/2 small red cabbage, cut into wedges
  • 4 mandarins, unpeeled, sliced crossways
  • Coles Bakery Ciabatta Rolls, to serve
Instructions:
  • Preheat the oven to 220C and prepare a large baking tray by lining it with baking paper.
  • On the prepared tray, arrange the pumpkin and unpeeled garlic, then generously drizzle with 2 teaspoons of oil. Bake for 10 minutes until golden.
  • In a bowl, mix together soy sauce, crushed garlic, honey, and 2 teaspoons of sesame oil. Add the chicken and ensure it is coated well.
  • Arrange the broccoli, cabbage, and half of the mandarin on the tray. Pour out the chicken, saving the marinade. Lay the chicken on top of the pumpkin mixture. Top the chicken with the remaining mandarin slices, slightly overlapping. Drizzle the vegetables with the reserved marinade and the remaining oil. Bake for 20-25 minutes, or until the chicken is fully cooked and the vegetables are tender. Serve with the bread rolls.
