Warm and Limey Chicken Salad

Zesty lime-marinated chicken strips on a vibrant salad with mandarin oranges, crunchy walnuts, and sweet golden raisins.
Ingredients:
  • 0.25 cup fresh lime juice
  • 3 tablespoons white sugar
  • 1 teaspoon grated lime zest
  • 0.5 teaspoon rice vinegar
  • 0.25 teaspoon Dijon mustard
  • 1 pound skinless, boneless chicken breast halves - cut into thin strips
  • 2 tablespoons frozen limeade concentrate, thawed
  • 0.25 teaspoon black pepper
  • 1 head red leaf lettuce - rinsed, dried and torn
  • 1 (11 ounce) can mandarin oranges, drained
  • 0.25 cup golden raisins
  • 0.25 cup chopped walnuts
Instructions:
  • Combine lime juice, sugar, lime zest, rice vinegar, and mustard in a jar. Shake vigorously to mix well and set aside. In a separate small bowl, toss chicken with limeade concentrate and pepper.
  • In a skillet over medium-high heat, heat the oil. Cook and stir the chicken for 4 to 6 minutes, or until no longer pink and the juices run clear.
  • Assemble individual salad plates with lettuce, mandarin orange segments, golden raisins, and walnuts. Add cooked chicken on top and lightly drizzle with dressing.
