Spicy Tortilla Bean Soup

Warm and hearty spicy tortilla soup with beans, spices, lime juice, Cheddar cheese, and avocado - perfect for cozy winter nights!
Ingredients:
  • 2 tablespoons olive oil
  • 4 cloves garlic, diced
  • 2 (7 ounce) cans chipotle peppers in adobo sauce
  • 2 teaspoons ground cumin
  • 2 quarts vegetable broth
  • 2 (15 ounce) cans pinto beans, drained
  • 2 (15 ounce) cans garbanzo beans, drained
  • 2 (15 ounce) cans black beans, drained
  • 2 (14.5 ounce) cans diced spicy tomatoes
  • 2 (15.25 ounce) cans whole kernel corn, drained
  • 1 tablespoon ground cinnamon
  • 1 pinch cayenne pepper, or more to taste
Instructions:
  • In a pot over medium heat, saute onion and garlic in olive oil until onion is transparent, about 10 minutes. Stir in chipotle peppers and cook until fragrant, about 1 minute. Add chili powder and cumin; continue cooking until mixture is heated through, about 5 minutes.
  • Combine broth, pinto beans, garbanzo beans, and black beans with the onion mixture and bring to a boil. Stir in tomatoes, then reduce heat and simmer for 20 minutes. Add corn and cinnamon; continue cooking for 15 minutes, stirring occasionally. Season with cayenne pepper, salt, and black pepper to taste.
