Make spicy bean-filled tortilla mini pies topped with homemade guacamole for a simple and delicious dinner.
Ingredients:
  • 8 mini flour tortillas
  • 100g (1 cup) pizza cheese
  • 2 x 420g can Heinz® Beanz Creationz™ Medium Salsa Chilli Beanz
  • Coriander sprigs, to serve
  • Lime wedges to serve
  • 1 large avocado, flesh chopped
  • 1 bunch chives, snipped
  • Zest and juice of 1 lime
  • 1 long red chilli, finely chopped
  • 82.50 ml coriander, chopped
Instructions:
  • - Preheat your oven to 180°C/160°C fan-forced. - Grease a 6-hole, 1 cup muffin pan with oil. - Microwave tortillas for 20 seconds to soften. - Gently press one tortilla into each hole, folding the edges to fit snugly. - Bake for 10-12 minutes until tortillas are golden and crisp.
  • Slice the remaining tortillas into thin strips and mix them in a bowl with the cheese. Stuff the tortilla cups with Beanz Creationz™ and sprinkle the cheese mixture on top. Bake for 10 minutes until bubbly and golden brown.
  • While you wait, prepare the guacamole by mixing all the ingredients in a small bowl. Top the tortilla pies with the guacamole and fresh coriander sprigs, and serve with lime wedges.
