Spicy and flavorful pies for a delicious midweek pick-me-up.
Ingredients:
  • 4 flour tortillas
  • 9.20 gm olive oil
  • 1 brown onion, coarsely chopped
  • 400g beef mince
  • 2 garlic cloves, crushed
  • 1 tsp Mexican chilli powder (optional)
  • 1 x 425g can Mexican beans
  • 70g (2/3 cup) coarsely grated cheddar
  • 85g (1/3 cup) sour cream
  • 62.50 ml fresh coriander leaves, coarsely chopped
  • 1/3 iceberg lettuce, finely shredded
  • 2 tomatoes, cut into wedges
Instructions:
  • Preheat the oven to 180°C. Line four 750ml (3-cup) capacity ovenproof dishes with the tortillas and bake for 15 minutes, or until golden.
  • Heat oil in a frying pan over medium heat. Sauté onion until soft. Add mince, garlic, and chilli powder. Cook for 5 minutes until mince changes color. Stir in beans and tomato paste. Cook for 2 minutes until mixture thickens.
  • Distribute the tortilla cases onto serving plates. Fill each case with the mince mixture. Add a sprinkle of cheddar on top. Finish with dollops of sour cream and fresh coriander. Serve alongside lettuce and tomato. Stir and cook for 2 minutes.
