Mexican beef and bean casserole with layers of crunchy tortilla chips, creamy sour cream, and melted cheese - a family favorite!
Ingredients:
  • 1 pound lean ground beef
  • 2 cups salsa
  • 1 (16 ounce) can chili beans, drained
  • 3 cups tortilla chips, crushed
  • 2 cups sour cream
  • 1 (2 ounce) can sliced black olives, drained
  • 0.5 cup chopped green onion
  • 0.5 cup chopped fresh tomato
  • 2 cups shredded Cheddar cheese
Instructions:
  • Assemble all ingredients.
  • Preheat the oven to 350 degrees Fahrenheit (175 degrees Celsius) and coat a 9x13 baking dish with cooking spray.
  • Preheat a large skillet over medium-high heat. Brown and crumble the ground beef in the skillet for 8 to 10 minutes.
  • Mix in the salsa, lower the heat, and simmer until all the liquid is absorbed, approximately 20 minutes. Add the beans and cook until they are heated through.
  • Evenly layer crushed tortilla chips in the baking dish, top with the beef mixture. Spread a generous layer of sour cream over the beef and sprinkle with olives, green onion, and tomatoes, then cover everything with Cheddar cheese.
  • Bake in the preheated oven for approximately 30 minutes until it's piping hot and bubbling.
