Easy Mexican beef mince bake recipe

Protein and fiber-packed sweet potato casserole with irresistible cheesy topping that will have your family begging for more!
Ingredients:
  • 18.20 gm olive oil
  • 500g Beef 3 Star Regular Mince
  • 1 brown onion, finely chopped
  • 450g sweet potato, peeled, cut into 2.5cm pieces
  • 30g packet taco seasoning
  • 1 tsp dried oregano leaves
  • 800g can diced tomatoes
  • 400g can black beans, rinsed, drained
  • 100g (1 cup) pre-grated Mexican cheese blend
  • 82.50 ml chopped fresh coriander sprigs
  • 2 green shallots, thinly sliced
Instructions:
  • In a large flameproof baking dish, heat the oil over medium-high heat. Add the beef and onion, breaking up any lumps with a wooden spoon. Cook for 8 minutes until the beef is browned and onion is soft. Microwave the sweet potato in a covered, microwave-safe bowl on High for 5 minutes until tender. Drain any excess liquid.
  • Sprinkle the taco seasoning and oregano over the beef, cooking and stirring for 1 minute until fragrant. Add in the tomatoes, black beans, and sweet potato, bringing it to a boil. Lower the heat to medium and simmer for 5 minutes until the beans are heated through and the liquid reduces slightly.
  • Preheat the grill to high heat and then spread the cheese evenly over the beef mixture. Grill for 5 minutes or until the cheese is beautifully melted and golden. Finally, season to taste and garnish with fresh coriander and shallots before serving.
