Spicy beef burrito bake ready in 45 minutes using salsa mix and microwave rice for a quick and flavorful Mexican meal.
Ingredients:
  • Mashed avocado, to serve
  • 36.40 gm olive oil
  • 500g beef mince
  • 1 red onion finely chopped
  • 1 red capsicum, deseeded, finely chopped
  • 40g pkt burrito spice mix
  • 410g can crushed tomatoes
  • 375g jar Thick ‘N Chunky Salsa Mild
  • 450g pkt microwave brown rice
  • 420g can black beans, rinsed, drained
  • 155g (1 ½ cups) pre-grated Mexican Style cheese blend
  • Fresh coriander leaves, to serve
Instructions:
  • Preheat your oven to 220C (200C fan forced) and generously grease a 5cm-deep, 20 x 30cm roasting pan.
  • In a large, deep frying pan over medium-high heat, heat oil. Cook beef, onion, and capsicum for 8 minutes until beef is browned and vegetables are softened, breaking up any lumps with a wooden spoon. Stir in the spice mix and cook for 1 minute until aromatic.
  • Combine tomatoes, salsa, and 60ml (1/4 cup) water in a pot. Stir well and bring to a boil. Lower the heat to medium and simmer for 5 minutes until slightly thickened. Stir in the rice and beans, then season to taste.
  • Pour the mixture into the prepared pan, ensuring the surface is smooth. Sprinkle cheese on top. Bake for 20 minutes or until golden. Serve topped with avocado and coriander.
