Beef nachos recipe

Make quick and delicious beef nachos using pantry staples in 3 easy steps.
Ingredients:
  • 1 large onion, finely chopped
  • 500g Carbon Neutral Beef Mince
  • 300g can kidney beans, drained, rinsed
  • 1 tsp Mexican chilli powder
  • 35g sachet reduced-salt taco seasoning mix
  • 44.40 gm tomato paste
  • 62.50 gm water
  • 125.00 ml coriander leaves, chopped
  • 230g packet corn chips
  • 250.00 ml grated cheddar cheese
  • 125.00 ml tomato salsa
  • Avocado, diced, to serve
  • Bulla Light Sour Cream
  • Fresh coriander, to serve
Instructions:
  • Preheat your oven to 200C. In a non-stick frying pan over medium heat, sauté the onion until soft, about 2 minutes. Add the mince and cook for about 5 minutes, using a wooden spoon to stir occasionally, until browned.
  • Combine kidney beans, chili powder, seasoning, tomato paste, and water in the pot. Lower the heat to medium-low and let it simmer for 5 minutes, or until thickened. Finish by stirring in the fresh coriander.
  • Spread corn chips out on a heatproof plate. Layer with mince and cheese. Bake for 15 minutes, or until bubbly. Finish by topping with salsa, avocado, sour cream, and fresh coriander. Serve and enjoy!
