Create a quick and delicious nacho bowl with thinly sliced roast beef in just 10 minutes - no cooking required!
Ingredients:
  • 400g can red kidney beans, rinsed, drained
  • 125g can corn kernels, rinsed, drained
  • 100g drained roasted capsicum, thinly sliced
  • 1/2 red onion, finely chopped
  • 82.50 ml chopped coriander
  • 21.00 gm lime juice
  • 170g corn chips
  • 1 avocado, stoned, peeled, thinly sliced
  • 1 baby cos lettuce, leaves separated
  • 250g thinly sliced roast beef, coarsely torn
  • 85g salsa
  • 60g sour cream
Instructions:
  • In a bowl, mix the beans, corn, capsicum, onion, and coriander. Drizzle with oil and lime juice, then toss to combine.
  • On individual serving plates, create a vibrant arrangement of corn chips, creamy avocado slices, and crisp lettuce leaves. Add a generous spoonful of the flavorful bean mixture, juicy beef, and zesty salsa on top. Complete the dish with a dollop of rich sour cream on the side. Enjoy your delicious creation!
