Speedy weeknight mash-up featuring burger-inspired nachos.
Ingredients:
  • 18.40 gm vegetable oil
  • 500g beef mince
  • 40g sachet Grill Mates All Star Burger Seasoning
  • 41.60 gm tomato sauce
  • 4 hamburger buns, split, toasted
  • 170g pkt unsalted corn chips
  • 115g (1 1/2 cups) pre-grated Mexican cheese
  • 250g cherry tomatoes, quartered
  • 2 green shallots, sliced
  • 82.50 ml sliced pickled gherkins, to serve
Instructions:
  • Start by preheating the grill to medium heat. Then, in a large frying pan over medium-high heat, heat oil. Add the mince and cook for 5 minutes, breaking up any lumps with a wooden spoon, until browned. Add seasoning and tomato sauce, stir well to combine, and keep it warm.
  • Cut each toasted bun into 6 wedges, from top to base. Arrange the bun wedges in heatproof bowls with corn chips, then sprinkle with cheese. Grill for 2 minutes until the cheese is golden and melted.
  • In a small bowl, mix the tomato and shallot. Divide the mince mixture into bowls and garnish with the tomato mixture and sliced pickles before serving.
