Savor the simplicity of this cozy beef and cheese casserole – a quick and comforting twist on classic Hamburger Helper.
Ingredients:
  • 12 ounces (340g) dried elbow macaroni (about 6 cups dry pasta)
  • 1 1/2 pounds ground beef (I like 80:20)
  • 2 teaspoons oregano
  • 1 teaspoon sea salt
  • 1 teaspoon black pepper
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 2 teaspoons butter
  • 1/2 cup chopped yellow onion
  • 1 tablespoon minced garlic
  • 1/4 cup tomato puree
  • 1 1/2 cup heavy cream
  • 1/4 cup chicken stock
  • 1/2 teaspoon dried parsley flakes
  • 1/2 teaspoon dried basil flakes
  • 2 cups shredded Monterey Jack cheese, divided
  • 2 cups shredded cheddar cheese, divided
Instructions:
  • Preheat your oven to 400°F for the perfect cooking temperature.
  • Cook the pasta: In a large pot, bring salted water to a rolling boil (1 tablespoon of salt for every 2 quarts of water). Add the dry pasta and cook uncovered for 9-11 minutes until al dente. Drain using a colander and set aside.
  • As the pasta simmers, brown the ground beef in a large skillet over medium heat. Season with oregano, sea salt, black pepper, chili powder, and ground cumin. Stir occasionally until beef is cooked through and browned, approximately 5 minutes.
  • Incorporate the butter, onions, garlic, and tomato puree into the skillet with the ground beef, stirring until well mixed.
  • Mix the pasta into the ground beef, then blend in the heavy cream, chicken stock, parsley, basil, 1 1/2 cups Monterey Jack cheese, and 1 cup cheddar cheese until well combined.
  • Transfer mixture into a 9x13-inch casserole dish without greasing and sprinkle the remaining cheese on top.
  • Bake the casserole until the cheese is golden brown and bubbling, for 15 to 20 minutes.
  • Serve and store: To enjoy a more cohesive casserole, let it rest for 10 minutes before serving. To keep it fresh, refrigerate in an airtight container for 3-4 days or freeze for up to 3 months.
