Indulgent cheeseburger soup with lean beef, potatoes, veggies, and gooey cheese for a satisfying meal.
Ingredients:
  • 4 tablespoons butter, divided
  • 0.5 pound ground beef
  • 0.75 cup chopped onion
  • 0.75 cup shredded carrots
  • 0.75 cup chopped celery
  • 1 teaspoon dried basil
  • 1 teaspoon dried parsley
  • 4 cups cubed potatoes
  • 3 cups chicken broth
  • 0.25 cup all-purpose flour
  • 1.5 cups milk
  • 2 cups cubed Cheddar cheese
  • 0.25 cup sour cream
Instructions:
  • In a large pot over medium heat, melt 1 tablespoon of butter. Add ground beef, onion, carrots, and celery, and cook, stirring occasionally, until the beef is browned and crumbly, about 5 to 7 minutes.
  • Mix in the fragrant basil and parsley. Introduce the potatoes and broth, then bring to a vigorous boil. Lower the heat to a gentle simmer and cook until the potatoes are fork-tender, about 10 to 12 minutes.
  • In a small saucepan over medium heat, melt the remaining butter. Add flour and whisk until smooth for about 1 minute. Gradually pour in the milk, simmer and stir until the sauce becomes thick and smooth.
  • Mix the sauce into the soup, stirring constantly. Bring to a boil, then lower the heat and stir in the cheese until it melts. Add sour cream and stir until heated through.
  • Serve piping hot and savor every bite!
