Cheeseburger soup: A simple, cozy dish with hash browns, beef, and melty cheese for a satisfying family meal.
Ingredients:
  • 1 pound ground beef
  • 2 carrots, shredded
  • 1 stalk celery, diced
  • 1 teaspoon dried basil
  • 2 tablespoons dried parsley
  • 4 tablespoons margarine
  • 3 cups chicken broth
  • 3 cups hash brown potatoes
  • 0.25 cup all-purpose flour
  • 8 ounces processed cheese food
  • 1.5 cups milk
  • 0.25 cup sour cream
Instructions:
  • Preheat a 3-quart saucepan over medium-high heat. Brown the beef by cooking and stirring until it's crumbly, typically 5 to 7 minutes. Set the beef aside.
  • Melt 1 tablespoon butter in the saucepan. Add onion, carrots, celery, basil, and parsley. Saute until vegetables are tender, for about 3 to 5 minutes. Stir in broth, hash brown potatoes, and browned beef. Bring to a boil, then reduce heat, cover, and simmer until potatoes are tender, approximately 5 to 10 minutes.
  • Melt the remaining butter in a small skillet until smooth, for about 1 minute. Add flour and cook and stir for another minute. Then, add this mixture to the soup and cook for 2 minutes more on low heat.
  • Add a generous amount of cheese, creamy milk, a pinch of salt, and a sprinkle of pepper; cook and stir until the cheese is perfectly melted. Remove from heat and fold in sour cream until creamy. Serve piping hot and enjoy immediately.
