Easy Cheeseburger Mini Muffins

Quick and easy cheeseburger bites, great for game day or family gatherings.
Ingredients:
  • cooking spray
  • 1 pound ground beef
  • 1 onion, chopped
  • 2.5 cups all-purpose flour
  • 2 tablespoons white sugar
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 0.75 cup milk
  • 0.75 cup ketchup
  • 0.5 cup butter, melted
  • 2 eggs, lightly beaten
  • 1 tablespoon yellow mustard
  • 2 cups shredded Cheddar cheese
Instructions:
  • Preheat oven to 425 degrees F (220 degrees C) and generously coat 24 mini-muffin cups with cooking spray.
  • Heat a skillet over medium-high heat. Saute beef and onions until browned and crumbly, about 5 to 7 minutes. Remove excess fat and let it cool.
  • In a large bowl, mix together flour, white sugar, baking powder, and salt. In a separate bowl, whisk together milk, ketchup, melted butter, eggs, and mustard until combined. Stir the wet ingredients into the flour mixture until just moistened. Gently fold in the ground beef mixture and Cheddar cheese into the batter, then spoon into each muffin cup.
  • Bake muffins until a toothpick inserted in the center comes out clean, approximately 15 minutes.
