Savor the irresistible pairing of zesty tomato pilaf and smoky char-grilled chicken - a must-have for your next family feast!
Ingredients:
  • 500g ripe tomatoes, finely chopped
  • 22.20 gm tomato paste
  • 2.50 gm caster sugar
  • 250.00 gm white long-grain rice, rinsed
  • 191.25 gm chicken style liquid stock
  • 82.50 ml pitted kalamata olives, sliced
  • 800g chicken thigh
  • Olive oil cooking spray
  • 62.50 ml flat-leaf parsley leaves, roughly chopped
Instructions:
  • Warm the oil in a saucepan over medium-high heat, then add the onion and garlic. Cook and stir for 3 minutes until they are soft.
  • Combine tomatoes, tomato paste, sugar, salt, and pepper in a saucepan. Stir well. Bring to a boil, then reduce heat, cover, and simmer for 10 minutes until tomatoes are very soft.
  • Combine rice and stock in the pot. Cover and simmer for 20 minutes or until rice is tender and liquid is absorbed. Mix in olives and season with salt and pepper.
  • Preheat a chargrill on medium-high heat. Spray chicken with oil and season with salt and pepper. Chargrill the chicken for 4 to 5 minutes on each side until cooked through. Transfer to a plate, cover with foil, and let it stand for 5 minutes before serving.
  • Slice the chicken, spoon the pilaf into bowls, top with the sliced chicken, sprinkle with fresh parsley, and serve.
