Chicken-Grapefruit Salad

Try this delicious chicken and fruit salad for a satisfying meal!
Ingredients:
  • 2/3 cup plain fat-free yogurt
  • 1/2 cup finely chopped peeled cucumber
  • 3 tablespoons grapefruit juice
  • 2 tablespoons light mayonnaise or salad dressing
  • 1 teaspoon prepared horseradish
  • 1/4 teaspoon pepper
  • 3 cups cubed cooked chicken
  • 2 cups red grapefruit sections (2 large grapefruit)
  • 3/4 cup chopped peeled cucumber
  • 1 medium avocado, peeled, pitted, coarsely chopped
  • 5 cups watercress sprigs (2 large bunches) or arugula
Instructions:
  • Combine the dressing ingredients in a large bowl using a wire whisk or spoon. Add in the chicken, grapefruit, cucumber, and avocado, and gently toss until everything is evenly coated.
  • Chill in the fridge for about 1 hour until cold. Serve over a bed of fresh watercress.
