Elevate salads with zesty grapefruit vinaigrette for a burst of flavor.
Instructions:
  • Combine sugar, garlic, grapefruit juice, and 60ml (1/4-cup) oil in a bowl. Add salt to taste and set aside.
  • With precision, peel the grapefruit using a sharp knife to remove the skin and white pith. Slice the fruit into segments and place them in a spacious bowl, keeping them aside for later use.
  • Fill a large saucepan halfway with cold water and bring to a boil over high heat. Reduce heat to low, add chicken, and simmer covered for 20 minutes until tender. Remove chicken to a plate and let it rest for 10 minutes. Shred into thin strips and add to the bowl with the grapefruit.
  • In a large non-stick frying pan, heat 2 tablespoons of oil. Cook half of the wonton wrappers for 30 seconds on each side until golden and crispy. Place on a plate lined with paper towels. Repeat with the remaining oil and wrappers. Break the wontons into large pieces and set aside.
  • Gently combine wonton pieces, watercress, 2 tablespoons of shallots with grapefruit segments. Drizzle with vinaigrette, season with salt and pepper. Divide into plates, sprinkle with chillies and remaining shallots. Serve promptly.
