Chicken spring rolls

Make homemade crispy Chinese chicken spring rolls for a delicious meal!
Ingredients:
  • 500g RSPCA Approved Chicken Mince
  • 1 spring onion, thinly sliced
  • 2 tsp finely grated ginger
  • 1 garlic clove, crushed
  • 1 tsp Chinese Five Spice
  • 10 sheets spring roll pastry, thawed
  • 80g chinese cabbage
  • 1 carrot, coarsely grated
  • Vegetable oil, to deep-fry
  • 145g pkt Ready Sauce for Lemon Chicken or Ready Sauce for Honey & Soy Stir-Fry Chicken
  • 1 long red chilli, thinly sliced (optional)
  • 1 spring onion, extra, thinly sliced
Instructions:
  • Mix together the ground meat, green onions, ginger, garlic, and Chinese five spice in a bowl.
  • Lay down a spring roll pastry sheet. Add 2 tablespoons of the mince mixture diagonally on one corner. Sprinkle with some wombok and carrot. Moisten the opposite corner with water. Fold in the sides and roll up to seal the filling. Repeat with the rest of the pastry sheets, mince mixture, wombok, and carrot.
  • Fill a large saucepan halfway with oil and heat to 180°C over medium-high heat (oil is ready when a bread cube browns in 15 secs). Cook rolls in batches for 5 mins until golden and cooked through. Transfer to a paper towel-lined plate using a slotted spoon.
  • Stir together the sauce and 2 tablespoons of water in a small saucepan over medium heat until warmed. Pour into a serving bowl.
  • Garnish the sauce with optional chili and extra spring onion. Enjoy with rolls.
