Baked chicken spring rolls

Crispy and golden budget-friendly spring rolls make a delightful Asian appetizer.
Ingredients:
  • 1 barbecued chicken or roast chicken
  • 2 corncobs, husks removed
  • 4 green onions, thinly sliced
  • 1 tsp finely grated ginger
  • 1/2 tsp sesame oil
  • 21.00 gm soy sauce
  • 1 pkt frozen spring roll wrappers
  • 60ml peanut oil
Instructions:
  • Separate chicken meat into large pieces, discard skin and bones. Shred chicken finely and place in a bowl.
  • Boil corn in a saucepan over medium heat for 5 minutes until tender. Drain and cool under running water. Remove kernels from cobs. Mix with chicken, onions, ginger, sesame oil, and soy sauce. Combine well.
  • Preheat the oven to 200°C. Arrange a spring roll wrapper with a tip facing you. Spoon 2 tablespoons of corn mixture onto the pastry. Fold the pastry over the filling once. Fold in the side corners. Moisten the far corner with water, then tightly roll up. Repeat the process with the remaining filling and pastry.
  • Lay spring rolls on a baking sheet. Coat with flavorful peanut oil, then bake for 20-25 minutes until irresistibly crispy and golden.
