Crispy chicken wontons

Impress your guests with make-ahead delectable chicken wontons - perfect for easy entertaining.
Ingredients:
  • 202.50 gm hoisin sauce
  • 57.20 gm honey
  • 1.2kg chicken breast fillet, sliced through centre
  • 36.80 gm vegetable oil
  • 2 tsp sesame oil
  • 270g packet (40 pieces) wonton wrappers
  • 3 Lebanese cucumbers, sliced, cut into thin strips
  • 1 bunch coriander, leaves removed
Instructions:
  • Mix together 1/2 cup of hoisin sauce, honey, and 1 tablespoon of water in a shallow ceramic dish. Place the chicken in a single layer, ensuring it is coated in the marinade. Cover and refrigerate for 2 hours.
  • Preheat your oven to 180°C. Prepare 2 baking trays with baking paper. Mix together vegetable and sesame oils in a small bowl. Lay out wonton wrappers in a single layer on the trays. Brush them with the oil mixture. Bake for 10 minutes or until they turn a light golden color. Remove from oven and transfer to a wire rack. Repeat the process with the remaining wonton wrappers and oil.
  • Preheat oven to 200°C. Arrange chicken on baking trays. Roast, brushing with marinade every 10 minutes, for 25 to 30 minutes until cooked through. Let cool, then shred.
  • In a small bowl, mix 1 tablespoon of hot water with the remaining 1/4 cup of hoisin sauce. Place wontons on serving plates, spoon a tablespoon of chicken onto each, drizzle with a teaspoon of the hoisin mixture, then top with cucumber and coriander. Serve and enjoy!
