Crispy chicken wontons with sweet chilli sauce

Irresistible crispy wontons steal the spotlight at any gathering.
Ingredients:
  • 500g chicken mince
  • 2 green shallots, trimmed, sliced
  • 2 tsp finely grated fresh ginger
  • 40.00 ml finely chopped fresh lemon grass
  • 3 fresh makrut lime leaves, centre vein removed, finely shredded
  • 40.00 ml water chestnuts, drained, finely chopped
  • 12.20 gm fish sauce
  • 1 x 250g pkt (45 sheets per packet) flour wonton wrappers
  • Vegetable oil, to deep-fry
  • Sweet chilli sauce, to serve
Instructions:
  • In a bowl, mix together the chicken, shallots, garlic, ginger, lemongrass, lime leaves, water chestnuts, and fish sauce.
  • Lay out 10 wonton wrappers on a tidy work surface. Add a generous teaspoon of chicken mixture into the center of each wrapper. Moisten edges with water and seal tightly. Repeat with the rest of the wrappers and chicken mixture. (Instructions for freezing can be found below.)
  • Heat oil in a deep frying pan to a depth of 4cm. Test the oil by frying a cube of bread until golden brown in 15 seconds. Deep fry 10 wontons at a time for 5-6 minutes or until golden. Drain on paper towel and repeat with the remaining wontons.
  • Serve alongside a delectable sweet chilli sauce.
