Ingredients:
  • 1 package (6.2 oz) fast-cooking long-grain and wild rice mix
  • 2 cups chopped cooked chicken or turkey
  • 1 medium unpeeled eating apple, chopped (1 cup)
  • 1 medium green bell pepper, chopped (1 cup)
  • 1 medium stalk celery, chopped (1/2 cup)
  • 1/2 cup chopped dried apricots
  • 1/3 cup chopped dried cherries
  • 2 tablespoons soy sauce
  • 2 tablespoons water
  • 2 teaspoons sugar
  • 2 teaspoons cider vinegar
  • 1/3 cup dry-roasted peanuts
Instructions:
  • Prepare the rice according to package instructions, without adding butter. Spread the cooked rice evenly in a thin layer on a large cookie sheet. Allow it to cool for 10 minutes, stirring occasionally.
  • In a large bowl, combine chicken, apple, bell pepper, celery, apricots, and cherries. In a small bowl, whisk together soy sauce, water, sugar, and vinegar until the sugar dissolves.
  • Combine the rice and soy sauce mixture with the apple mixture and toss until well coated. Then, add the peanuts and gently toss to combine.
