Asian poached chicken & wild rice salad

Whip up a refreshing Asian-inspired salad for a wholesome family dinner.
Ingredients:
  • 200.00 gm wild rice
  • 25.20 gm coconut oil
  • 1.5L chicken style liquid stock
  • 2 x 250g chicken breast fillets
  • 2 green onions, 1 thinly sliced on the diagonal, 1 cut into chunks
  • 3cm piece ginger, sliced
  • 42.00 gm lime juice
  • 20.00 ml grated palm sugar
  • 24.40 gm fish sauce
  • 375.00 ml bean sprouts, trimmed
  • Bunch radishes, thinly sliced
  • 1 green capsicum, cut into batons
Instructions:
  • In a medium saucepan, combine wild rice, coconut oil, and 1L chicken stock. Bring to a boil, cover, and simmer over medium heat for 45 minutes. Let it rest covered for 10 minutes. Drain and allow it to cool.
  • Simmer chicken, onion chunks, and ginger in remaining chicken stock until chicken is cooked through. Drain and shred chicken once cooled.
  • In a jug, mix together lime juice, sugar, and fish sauce until the sugar dissolves, creating a harmonious and flavorful blend.
  • In a large bowl, mix together rice, chicken, sprouts, radish, capsicum, the rest of the onion, and dressing. Toss until everything is evenly coated.
