Asian-inspired poached chicken salad with a crispy twist.
Ingredients:
  • 4 chicken breast fillets (about 170g each)
  • 180g soba noodles (see note)
  • 1 carrot, cut into matchsticks
  • 1 red capsicum, thinly sliced
  • 1 long red chilli, seeds removed, thinly sliced
  • 1 bunch spring onions, thinly sliced on an angle
  • 40.00 ml rice vinegar
  • 1 tsp sesame oil
  • 21.00 gm dark soy sauce
Instructions:
  • Gently immerse the chicken in a saucepan filled with cold water, making sure it is covered by 5cm. Bring it to a boil, then let it simmer over medium heat for 10 minutes or until fully cooked. Take the chicken out of the pan and allow it to cool.
  • Cook the soba noodles following the package guidelines. Once cooked, drain and rinse them under cold water. Then, place the noodles in a bowl along with the carrot, capsicum, chili, and spring onion. Shred the cooled chicken and mix it into the bowl.
  • In a jug, combine the vinegar, sesame oil, soy sauce, sugar, and 2 tablespoons of cold water. Whisk until the sugar is dissolved and everything is well combined.
  • Combine the soy dressing with the noodles, ensuring they are well-coated. Distribute the salad evenly into bowls and serve.
