Poached chicken and vegetable soup

Hearty and flavorful chicken soup packed with goodness and filling.
Ingredients:
  • 1.6 kg whole higher-welfare chicken
  • 4 carrots peeled and sliced
  • 1 heart celery sliced, yellow leaves reserved
  • 12 new potatoes peeled
  • a few sprigs fresh thyme
  • 2 large handfuls peas
  • 1 leek washed and shredded
  • 1 small bunch fresh flat-leaf parsley leaves picked and chopped
Instructions:
  • In a large, deep pan, combine chicken, carrots, celery, potatoes, and thyme. Add 3 liters of water or enough to cover the chicken. Simmer on medium heat for 1½ hours until chicken is cooked. Remove chicken from the pan and strain the broth, reserving the vegetables. Return broth to high heat and reduce for 15 minutes until about 2 liters remain. Shred the chicken into long chunks. Once broth has reduced, add vegetables, peas, leeks, and chicken to the pan. Simmer for 5 more minutes, then discard thyme sprigs. Serve in warm bowls topped with chopped parsley and celery leaves.
