Poached chicken on soba noodles and spinach

Nutritious vegetables and juicy poached chicken combined in a simple noodle dish.
Ingredients:
  • 180g soba noodles
  • 42.00 gm reduced-salt soy sauce
  • 250ml chicken stock
  • 20.00 ml mirin (see note)
  • 42.00 gm unsweetened apple juice
  • 4 chicken breast fillets, trimmed
  • 1 bunch English spinach
  • 200g snow peas, trimmed
  • 24.00 gm sesame seeds, toasted
Instructions:
  • Boil soba noodles until tender, then drain.
  • In a large deep frying pan, combine soy sauce, chicken stock, mirin, apple juice, and sesame oil. Bring to a boil, then reduce heat to a simmer. Add chicken, cover, and cook for 10 minutes until tender. Let it rest for 5 minutes before slicing.
  • Toss spinach and snow peas into the pan and sauté until vibrant in color. Then, take them out.
  • Portion out piles of soba noodles onto individual plates, layering them with snow peas, chicken slices, and spinach. Finish by generously drizzling with the flavorful cooking liquid and garnishing with a sprinkle of sesame seeds before serving.
