Chickpea, marinated vegetable and feta salad

Try this refreshing chickpea salad with marinated veggies and feta for a tasty Earth Hour celebration.
Ingredients:
  • 2 x 400g cans chickpeas, rinsed, drained
  • 500.00 ml roughly chopped mixed marinated chargrilled vegetables (see note)
  • 30.00 ml red wine vinegar
  • 60ml olive oil
  • salt and cracked black pepper
  • 120g baby spinach leaves
  • 125g Greek feta, roughly crumbled
Instructions:
  • Mix the chickpeas and charred vegetables together in a large bowl.
  • In a small bowl, whisk together the red wine vinegar, olive oil, salt, and pepper until fully combined.
  • Coat the chickpea mixture evenly by pouring dressing over it and tossing well.
  • Place the delicate baby spinach leaves elegantly on a platter, generously spoon over the flavorful chickpea mixture, sprinkle with crumbly feta, and serve promptly to enjoy at its best.
