Chickpeas make tasty, high-protein burger patties with a nutty flavor even meat-lovers enjoy.
Ingredients:
  • 45.50 gm olive oil
  • 1 onion, finely chopped
  • 2 garlic cloves, crushed
  • 2 x 400g cans chickpeas, rinsed, drained
  • 1 zucchini, grated, squeezed of excess moisture
  • 1 carrot, peeled, finely grated
  • 1 bunch coriander, leaves picked
  • 31.50 gm fresh lemon juice
  • 1 egg
  • 90g breadcrumbs
  • Salt & freshly ground pepper
  • 6 wholegrain bread rolls, halved, toasted
  • 40g mixed Asian salad leaves
  • 1 Lebanese cucumber, peeled into ribbons
  • Sweet chilli sauce, to serve
  • Light sour cream, to serve
Instructions:
  • In a frying pan over medium heat, heat 1 tablespoon of oil. Add onion and garlic, cook for 6-7 minutes.
  • Combine chickpeas, zucchini, carrot, coriander, lemon juice, and egg in a food processor and blend until smooth. Transfer the mixture to a bowl and mix in breadcrumbs, onions, and garlic. Season generously with salt and pepper. Shape the mixture into 6 patties and chill in the refrigerator for 1 hour before cooking.
  • Heat the remaining oil over medium heat, then cook the patties for 3-4 minutes on each side.
  • Layer the salad leaves, chickpea patty, cucumber, sour cream, and sweet chili sauce on the bottom half of the rolls. Top with the remaining halves and serve.
