Flavorful vegetarian chickpea meatballs with garlic and parsley - a quick, easy, and satisfying meatless main dish.
Ingredients:
  • 2 tablespoons olive oil
  • 1 white onion, minced
  • 6 cloves garlic, minced
  • 2 cups canned chickpeas, drained
  • 0.75 cup dry bread crumbs
  • 1 egg
  • 2 tablespoons parsley
  • 1 tablespoon salt-free seasoning blend
Instructions:
  • Preheat your oven to a toasty 375 degrees F (190 degrees C) and give your baking sheet a luxurious coating of cooking spray.
  • In a large skillet over medium heat, sauté onions and garlic in olive oil until tender, approximately 5 minutes.
  • In a food processor, blend chickpeas until finely ground. Add onion, garlic, bread crumbs, egg, parsley, seasoning blend, salt, and black pepper; process until mixture forms a dough-like consistency.
  • Using a scoop, form the chickpea mixture into balls, placing them on the baking sheet. Repeat until all the mixture is used.
  • Bake in the preheated oven until meatballs are golden brown on the bottom, approximately 15 minutes. Flip meatballs over and bake for an additional 10 minutes until golden brown on top.
