Thai chili crab with sweet, spicy, and savory ginger-garlic sauce.
Ingredients:
  • 3 shallots, peeled
  • 4 red chile peppers
  • 4 whole crabs, cleaned and quartered
  • 2 tablespoons vegetable oil
  • 3 cloves garlic, chopped
  • 1 (1/2 inch) piece fresh ginger, chopped
  • 3 tablespoons ketchup
  • 2 tablespoons vinegar
  • 2 tablespoons white sugar
  • 2 eggs, beaten
  • 1 tablespoon water, or as needed
  • 1 small bunch fresh cilantro, stems removed and leaves chopped
Instructions:
  • In a food processor, blend shallots and red chile peppers until a smooth paste forms.
  • Gently crack the crab claws and large legs.
  • In a sizzling wok or large skillet, heat oil until shimmering. Add crabs and sauté until shells turn vibrant and meat is tender, around 10 minutes. Remove crabs onto a serving plate, keeping the flavorful oil in the wok.
  • Lower the wok's heat to medium-low and stir in the chile pepper paste, cooking until fragrant for 1 to 2 minutes. Then, add the garlic and ginger. Combine ketchup, vinegar, and sugar in a bowl, pour over the garlic-ginger mixture, and stir until the sauce is thoroughly mixed.
  • Add the crab back to the flavorful sauce in the wok. Cook and stir for an additional 3 minutes, enhancing the dish with a sprinkle of salt and pepper. Gently pour in the eggs while stirring continuously to form delicate strands in the sauce. If needed, incorporate a little water to maintain the desired consistency. Lastly, take the wok off the heat and elegantly garnish the crabs with fresh cilantro.
