Satisfying Mexican casserole with seasoned ground beef and spicy green chiles, a delicious twist on classic chile rellenos.
Ingredients:
  • 1 pound lean ground beef
  • 2 (4 ounce) cans whole green chile peppers, drained
  • 1.5 cups shredded Cheddar cheese, divided
  • 4 eggs
  • 0.25 cup all-purpose flour
  • 1.5 cups milk
  • salt and pepper to taste
Instructions:
  • Preheat your oven to 350°F (175°C) for the perfect cooking temperature.
  • Brown the ground beef and onions in a large skillet over medium-high heat for 5 to 10 minutes, then drain any excess fat.
  • Place 1 can of chile peppers at the bottom of a 7x11-inch baking dish, then layer with half of the cheese. Add the meat mixture on top, then sprinkle the remaining cheese over the meat. Finish by adding the second can of chile peppers.
  • Whisk eggs, flour, and milk in a medium bowl until smooth. Pour the mixture over the chile peppers in the baking dish. Season to taste with salt and pepper.
  • Preheat oven to 350°F (175°C) and bake for 45-50 minutes. Allow to cool for 5 minutes before slicing.
