Cheesy chili relleno casserole with green enchilada sauce: a simple and delicious dinner.
Ingredients:
  • 2 (7 ounce) cans whole green chiles, drained
  • 1 pound shredded Cheddar cheese
  • 2 tablespoons all-purpose flour
  • 1.5 (5 ounce) cans evaporated milk
  • 1 pound shredded Monterey Jack cheese
  • 2 (10 ounce) cans green enchilada sauce
Instructions:
  • Preheat your oven to a toasty 400 degrees F (200 degrees C) and generously grease a 9x13-inch baking dish.
  • Open the chiles and arrange half in the baking dish. Add a layer of Cheddar cheese, then top with the rest of the chiles. In a bowl, combine eggs, flour, and evaporated milk, then pour over the chiles and cheese.
  • Bake until the casserole is set for about 30 minutes, then top with Monterey Jack cheese. Pour green enchilada sauce over the dish and bake until the cheese is melted, approximately 15 minutes more.
