Delicious Chilean alfajores cookies: sweet butter cookies filled with caramelized condensed milk in a simple 5-ingredient recipe.
Ingredients:
  • 1 (14 ounce) can sweetened condensed milk
  • 7 tablespoons unsalted butter, softened
  • 7 tablespoons white sugar
  • 1 large egg, beaten
  • 7 tablespoons all-purpose flour
Instructions:
  • 1. In a large saucepan, submerge the unopened can of condensed milk in water. Bring to a boil and then reduce heat to a simmer. Cook until the milk caramelizes inside, approximately 2 hours.
  • Cool the mixture off the heat as you prepare the cookies.
  • Preheat your oven to 325°F (165°C).
  • Cream together butter and sugar in a bowl using an electric mixer until creamy. Add in the egg, then gradually mix in the flour until fully incorporated.
  • Place small spoonfuls of batter on an ungreased cookie sheet. Lightly dust your finger with flour and gently press each cookie into a thin, small circle resembling the size of a quarter.
  • Bake in the preheated oven until lightly golden around the edges and cooked through in the middle, about 10 to 12 minutes. Allow the cookies to cool on the baking sheet for 1 minute before transferring to a wire rack to cool for an additional 8 to 10 minutes.
  • Assemble cookies with caramelized condensed milk filling.
