Gambas Pil Pil (Prawns, Chilean Style)

Chilean garlic prawns with a hint of pisco for a flavorful twist on a Spanish tapas favorite.
Ingredients:
10clovesgarlic, peeled and slightly crushed
0.5 cupgrapeseed oil or olive oil
1.5 pounds large shrimp, peeled and deveined
1cacho de cabra pepper, or Anaheim pepper, seeded and cut into 1/2-inch pieces
3tablespoons pisco or brandy
salt to taste
cayenne pepper to taste
1lime, cut into wedges, for serving
Instructions:
In a skillet over medium-high heat, cook the garlic cloves in grapeseed oil until golden brown and the oil is hot.
Add the shrimp and sauté briefly to coat in oil, then stir in the chile pepper. Cook until shrimp turns pink and firm. Deglaze with pisco and let alcohol evaporate for extra flavor. Season with salt, transfer to a serving dish, and serve topped with cayenne pepper and lime wedges.
