Chilean garlic prawns with a hint of pisco for a flavorful twist on a Spanish tapas favorite.
Ingredients:
  • 10 cloves garlic, peeled and slightly crushed
  • 0.5 cup grapeseed oil or olive oil
  • 1.5 pounds large shrimp, peeled and deveined
  • 1 cacho de cabra pepper, or Anaheim pepper, seeded and cut into 1/2-inch pieces
  • 3 tablespoons pisco or brandy
  • salt to taste
  • cayenne pepper to taste
  • 1 lime, cut into wedges, for serving
Instructions:
  • In a skillet over medium-high heat, cook the garlic cloves in grapeseed oil until golden brown and the oil is hot.
  • Add the shrimp and sauté briefly to coat in oil, then stir in the chile pepper. Cook until shrimp turns pink and firm. Deglaze with pisco and let alcohol evaporate for extra flavor. Season with salt, transfer to a serving dish, and serve topped with cayenne pepper and lime wedges.
