Popular Spanish dish of sizzling garlic shrimp, best enjoyed with crusty bread.
Ingredients:
  • 1 pound frozen large shrimp (21-25 count) - thawed, peeled, and deveined
  • 1 teaspoon hot smoked paprika
  • kosher salt to taste
  • 4 cloves garlic
  • 0.25 cup extra-virgin olive oil
  • 2 tablespoons dry sherry
  • 1 tablespoon chopped Italian flat-leaf parsley
Instructions:
  • In a large bowl, generously season shrimp with paprika and kosher salt, ensuring they are evenly coated.
  • Thinly slice garlic. Heat oil in a skillet over medium heat, then add garlic and cook until golden, approximately 2 minutes. Increase heat to high, add shrimp, and cook until they start to curl but are still slightly undercooked, around 2 minutes. Pour in sherry and stir until the sauce comes to a boil and the shrimp are fully cooked, about 1 minute. Remove from heat and stir in parsley.
