Chiles rellenos: Cheddar-stuffed peppers, crispy fried to golden perfection in canola oil.
Ingredients:
  • 12 Anaheim chile peppers, charred and peeled
  • 1 pound Cheddar cheese, cut into strips
  • 1 cup milk
  • 1 cup all-purpose flour
  • 1 egg, beaten
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon canola oil
  • oil for fryin
Instructions:
  • Prepare the chile peppers by deseeding and removing the membranes. Fill each pepper with a strip of Cheddar cheese.
  • Combine milk, 1 cup flour, egg, baking powder, baking soda, salt, and 1 teaspoon canola oil in a small bowl until fully mixed. Spread the remaining 1/2 cup flour on a shallow plate.
  • Add a generous amount of oil to a sturdy pan and heat over medium-high heat.
  • Coat the peppers with flour and then dip them in batter. Fry in batches until golden brown on both sides.
