Quick Chiles Rellenos Bake

Cheesy green chile enchiladas – Simple, delicious and perfect for leftovers. Fill chiles with cheese, wrap in tortillas, bake with creamy enchilada sauce.
Ingredients:
  • 3 (4 ounce) cans mild whole green chiles, drained
  • 2 cups shredded Pepper Jack cheese
  • 9 (8 inch) flour tortillas
  • 1 (19 ounce) can enchilada sauce
  • 1 cup sour cream
  • chopped fresh cilantro
Instructions:
  • Preheat your oven to 350°F (175°C).
  • Cut each chile in half lengthwise, deseed, and place 2 chile halves and approximately 3 1/2 tablespoons of cheese near the edge of each tortilla. Roll up the tortillas to seal the filling. Repeat with the rest of the tortillas, chiles, and cheese. Place the filled tortillas seam side down in a greased 9x13 inch baking dish. Combine enchilada sauce and sour cream in a small bowl, then pour over the filled tortillas.
  • Place in a preheated oven for 30 minutes or until hot and bubbly. Sprinkle with fresh cilantro before serving.
