Chili Chicken Soup with Cilantro Dumplings

Award-winning dumpling soup with spicy chiles, aromatic cumin, and fresh cilantro for a flavorful twist.
Ingredients:
  • 1 tablespoon vegetable oil
  • 1 1/4 lb boneless skinless chicken breasts, cut into 1-inch cubes
  • 1 medium onion, chopped (1/2 cup)
  • 3 teaspoons chili powder
  • 1/2 to 1 teaspoon salt
  • 5 cups Progresso™ chicken broth (from two 32-oz cartons)
  • 2 cups Original Bisquick™ mix
  • 2/3 cup milk
  • 1/2 cup chopped fresh cilantro
  • 1/2 teaspoon ground cumin
  • 1 jalapeño chile, seeded, chopped, if desired
Instructions:
  • In a 3-quart saucepan, warm oil over medium heat. Brown chicken, onion, chili powder, and salt, stirring often. Add broth and bring to a boil. Reduce heat to medium and simmer uncovered for 5 minutes.
  • In a medium bowl, combine Bisquick mix and milk until a soft dough forms. Gently stir in fresh cilantro, cumin, and chile. Use a spoon to drop 10 equal portions of the dough into the simmering soup. Cook uncovered for 10 minutes, then cover and cook for an additional 10 minutes.
