Spicy lime-marinated grilled chicken served with rice and veggies for a flavorful meal.
Ingredients:
  • 3 tablespoons olive oil
  • 1.5 tablespoons red wine vinegar
  • 1 teaspoon chili powder
  • 0.5 teaspoon paprika
  • 0.5 teaspoon onion powder
  • cayenne pepper to taste
  • salt and freshly ground black pepper to taste
  • 1 pound skinless, boneless chicken breast halves - cut into 1 1/2 inch pieces
  • skewers
Instructions:
  • Combine olive oil, vinegar, lime juice, chili powder, paprika, onion powder, garlic powder, cayenne pepper, salt, and black pepper in a small bowl. Place chicken in a shallow baking dish with the marinade, stirring to coat. Cover and refrigerate for at least 1 hour.
  • Preheat the grill until it's nice and hot. Skewer the chicken pieces and remove excess marinade.
  • Prepare the grill grate by lightly greasing it with oil. Grill the skewers for 10 to 15 minutes, or until the chicken juices are clear.
