Sweet Chili Lime Chicken with Cilantro Couscous

Tender chicken in zesty lime-soy glaze paired with herb-infused couscous for a simple yet flavorful dinner.
Ingredients:
  • 1 tablespoon olive oil
  • 1 pound skinless, boneless chicken breast halves, cubed
  • 1 pinch monosodium glutamate (such as Ac'cent®), or to taste
  • 6 tablespoons soy sauce
  • 6 tablespoons brown sugar
  • 0.5 teaspoon red pepper flakes, or more to taste
  • 1 lime, juiced and zested
  • 2 cups vegetable broth
  • 1 cup couscous
  • 0.33333334326744 cup chopped cilantro
  • 4 wedges lime for garnish
Instructions:
  • In a large skillet over medium heat, sizzle chicken breast cubes in olive oil until they're juicy and cooked through, about 5 to 6 minutes. Season with monosodium glutamate while cooking. Transfer chicken to a plate once done.
  • Combine soy sauce, brown sugar, red pepper flakes, lime juice, and lime zest in a bowl, stirring until the sugar dissolves. Transfer the sauce to a hot skillet, bring it to a boil, then lower the heat. Simmer, stirring occasionally, until the sauce slightly thickens, about 3 to 4 minutes. Add cooked chicken to the sauce and cook until it becomes glazed, about 2 to 3 minutes more, stirring frequently.
  • 1. In a saucepan, bring vegetable broth to a boil. 2. Stir in couscous, turn off the heat, and let it stand until the broth is absorbed, approximately 5 minutes. 3. Gently fold in cilantro into the couscous.
  • Spread the couscous on a serving platter, place the chicken on top, drizzle with sauce, and garnish with lime wedges. Just before enjoying, squeeze lime over the dish.
