Vegan Asian wood ear mushroom salad with cucumber, ginger, soy, sesame, and Thai chile - a refreshing main dish.
Ingredients:
  • 0.5 ounce dried wood ear mushrooms
  • 1 tablespoon lime juice
  • 1 tablespoon light soy sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon grated ginger
  • 1 teaspoon palm sugar
  • 0.5 teaspoon chopped Thai chile pepper
  • 1 Japanese cucumber, thinly sliced
  • 1 teaspoon sesame seeds
Instructions:
  • Hydrate mushrooms in water for 15 to 20 minutes. Boil in a saucepan over medium heat for 2 minutes, then cool and drain.
  • In a bowl, mix lime juice, soy sauce, sesame oil, ginger, sugar, and chile pepper. Add cucumber, mushrooms, and sesame seeds. Refrigerate for at least 1 hour before serving.
